油脂精炼过程包括油脂脱胶、脱酸、脱色、脱臭等重要工序，俗称四脱。其中，油脂脱臭是脱除油脂中臭味物质的过程。毛油经脱胶、脱酸、脱色以后，油中还存在一些不良臭味，如植物油中肥皂味、白土味等，这些不良臭味会对食用油感官品质产生不好的影响。引起不良臭味的物质主要是低分子醛类、酮类以及一些游离脂肪酸及其氧化物等。这些臭味物质的沸点较低，且影响着油脂的风味、气味、色泽以及稳定性。

溶剂的跑冒滴漏大致可以分为两种情况，一是溶剂通过密封不严处泄露。浸出车间内液体溶剂的泄露实际上是很少的，因为容器壳体、管道、法兰阀门、仪表和视镜等处的密封性能都经过了仔细的检查，很容易发现和解决。但是，在设备的转动轴、搅拌轴和泵的转动轴等处，由于填料密封不好，或者经过长时间运转后密封效果减弱，都会有溶剂气体向外泄漏，有时甚至会造成相当大的溶剂损耗。二是由于操作不当、因故障停车检修、疏通管道等情况造成的溶剂泄露。浸出器存料箱如果存料不足，或者密封绞龙未能起到料封作用等情况就会有较多的溶剂泄露。浸出系统内如果不能保持负压，也会造成溶剂蒸气向外泄漏。因故障停车检修损耗的溶剂量是不容易估算的，但若频繁停车检修，这部分损耗在溶剂损耗中所占的比例还是很高的。
